Pancit: stir-fried noodles with meat and veggies

Grocery store tips: 
-rice noodles can be found in the international section of most grocery stores or in asian markets. They look like this, and may come in packages that look like this
-this recipe can be easily made vegetarian or vegan by omitting the chicken that is called for and substituting your preferred protein source. 
-while carrots, celery, and cabbage are traditional ingredients for this filipino dish, feel free to clean out your refrigerator's veggie drawer and add whatever vegetables you would like :)

Ingredients

  • 1 (12 ounce) package dried rice noodles
  • 1 teaspoon vegetable oil
  • onion, finely diced
  • 3 cloves garlic, minced
  • 2 cups diced cooked chicken breast meat
  • 1 small head cabbage, thinly sliced
  • 1 rib of cellery, thinly sliced
  • 4 carrot, thinly sliced or several packages of skinny baby carrots
  • 1/4 cup soy sauce
  • Black pepper
  • 2 lemons - cut into wedges, for garnish

Directions

  1. Place the rice noodles in a large bowl, and cover with warm water. When soft, drain, and set aside.
  2. Heat oil in a large pan over medium heat. Saute onion and garlic until soft. Stir in chicken cabbage, carrots and soy sauce. Cook until cabbage begins to soften. Toss in noodles, and cook until heated through, stirring constantly. 
  3. Try it!  To adjust the flavor add soy sauce and ground black pepper to suit your taste.
  4. Transfer pancit to a serving dish and garnish with quartered lemons.
